Hey friends!! I just got back from a few days in NYC with my husband, and we had the best time. While my feet are absolutely destroyed after doing 25k steps a day (pro tip: do not wear Sambas in NYC 🙃), it was totally worth it. This trip was extra special because it was actually our first solo getaway since having Jack 11 months ago (!!), and it felt so good to have that time together. You know I had to drop this one into your inbox because if there’s one thing I get asked all the time, it’s where to eat in NYC.

A Summer Tomato Dinner Party You’ll Want to Host! 🍅
Grab a seat, hang out and let’s talk about Everything Delish, because summer is around the corner and it is officially tomato season, and I just hosted the dreamiest Tomato Dinner Party that I need to tell you about! You know I love a theme, and this one came together so naturally. I hit the farmer’s market and local grocery stores and was immediately inspired by all the vibrant, juicy heirloom tomatoes. From there, the menu built itself. Tomatoes in every course? Yes, please.
The Dish Everyone Talked About at My Tomato Dinner Party
If there was one dish that made everyone at my tomato dinner party stop mid-convo and say "wait, what is this?", it was this Heirloom Tomato Galette with a Basil Ricotta Spread! This one is rustic, beautiful, and full of flavor. But the best part? It looks way more impressive than it is. We’re talking store-bought puff pastry, a quick basil ricotta spread, and juicy heirloom tomatoes layered right on top. Fold the edges, brush them with egg wash, and let your oven do the rest. It came out golden, flaky, and bubbling with tomato juice.
Sunday Supper: Tomato-Themed Dinner ft. My Chicken Cutlets Topped with Caprese Salad
If there was one dish that disappeared faster than I expected at my tomato dinner party, it was these Caprese Chicken Cutlets. Crispy, golden, loaded with flavor, and topped with a fresh caprese salad, trust me when I say that they checked every box! This one is simple, but totally delivers. We’re talking thin, breaded chicken breasts pan-fried until crisp, then topped with a juicy mix of cherry tomatoes, mini bocconcini, arugula, and torn basil. A drizzle of balsamic glaze at the end ties it all together.
Dill Pickle Smashed Potato Salad on a Bed of Herby Dill Pickle Ranch
Hi friends! This week’s recipe is inspired by one of my biggest cravings: dill pickles. If you love anything tangy, herby, and a little creamy, this Dill Pickle Smashed Potato Salad is going to be your new go-to summer side! Crispy roasted baby potatoes get smashed and seasoned, then served on a bed of the dreamiest herby dill pickle ranch made with Greek yogurt, sour cream, and fresh herbs. It’s crunchy, creamy, salty, and packed with flavor in every bite. Top it all off with sliced pickles (obviously), more fresh herbs, and a drizzle of olive oil.

Okay, so you know how I love a salad that doubles as a full-on meal? Not just some greens on a plate, but a salad that feels like a moment. That’s exactly what this Ahi Tuna Niçoise is. It’s fresh, layered, a little bougie in the best way possible, and it comes together in under 30 minutes! I made it last week when I had some friends over, and it was one of those dishes where everyone paused mid-bite and went, “Wait…what is in this dressing?!” I live for that reaction.
