16 September 2026 ~ 3 Good Things
On Wednesday, the writer shares three good things that brought joy to their day. First, they mention enjoying the podcast "Dolly Parton’s America," highlighting how much they’re learning about Dolly’s impressive work and lasting legacy. It’s a reminder of how enriching podcasts can be.
Next, they celebrate a small win: finding a perfect parking spot right in front of the dry cleaner, which can really brighten a day. Lastly, they take pride in having prepared enough dinner the night before to enjoy leftovers, giving themselves a break from cooking. It’s a lovely way to practice self-care.
They wrap up by inviting the reader to share their own three good things, creating a warm connection.
Hello from the Tehachapi Valley in Southern California! I’m here learning all about how a certain vegetable goes from seed to farm to grocery stores all over America. It’s been absolutely fascinating, and I’m excited to share more of what I’ve learned soon. Also… get ready for some broccoli-filled recipes in the near-ish future! I’m feeling inspired 🥦 Today, I’m rounding up a few “quick things” that you might find useful — from meal train recipe ideas to twice-baked potatoes perfect for fall dinners and/or Thanksgiving, and more.
New lawsuit argues NIH violated First Amendment rights of grant applicants
A group of 17 researchers, including 13 named individuals and four who wish to remain anonymous, has filed a class action lawsuit against the National Institutes of Health, claiming that the agency is violating their First Amendment rights. They argue that the NIH is improperly screening grant applications for specific words and phrases, which they say leads to the rejection of funding for research on topics that the previous administration was not supportive of. This includes areas like diversity in research, health disparities, climate change, and vaccines. If the court rules in favor of the plaintiffs, the ruling could impact many other researchers whose work has been similarly affected by this screening process. The outcome could set a significant precedent for how funding decisions are made in the future.
It’s a savory twist on pumpkin that’s packed with protein and fiber, and the cleanup is super easy since everything cooks in one skillet. You start by browning the sausage, then add kale, shallots, and garlic, followed by orzo and broth. The pumpkin puree and coconut milk give it a creamy texture without dairy.
To round out your meal, consider pairing it with a delightful apples foster dessert from Cortney LaCorte’s new cookbook. It’s a simple recipe that caramelizes apples in butter, brown sugar, and rum, served warm over ice cream. Perfect for a fall gathering! Let me know if you give either a try; I’d love to hear how it goes!
You can pre-order Today We Are Cooking… HERE, but until then, paid subscribers are getting another exclusive recipe straight from the book. Full recipe below! Whenever cooking pasta, always reserve a cup of the salty, starchy water before draining it. Even a few tablespoons can nicely thicken a sauce and help it bind better to noodles. To remove sausage from its casing, cut a thin, shallow slit lengthwise in the sausage. The casing (skin) should pop apart. Then, using your fingers, peel it away, releasing the meat from the casing. Dispose of the casing.
